Foods that never expire – myth or reality?

The idea of foods that never expire may seem like something out of science fiction, but the reality is more nuanced. Under certain conditions, some products can have an extremely long shelf life without becoming unsafe for consumption.

Honey is the classic example: due to its low water content and antibacterial properties, it can remain stable for decades. At the technological end of the spectrum, freeze-dried foods—used even by NASA—are designed to last for years by removing almost all moisture.

Modern military rations and products intended for emergency situations are developed on similar principles: airtight packaging, oxygen control, and chemical stabilization. However, “non-perishable” does not mean “unchanged.” Over time, texture, taste, and nutritional value may deteriorate.

In the European Union, legislation imposes clear shelf-life limits even for stable products, in order to protect consumers. The term “best before” refers primarily to optimal quality, not to an immediate risk after that date has passed.

The future direction focuses on optimizing preservation rather than completely eliminating expiration. In the context of food waste, technologies that extend shelf life are becoming essential.

Therefore, “eternal” foods exist only within certain limits. They are not immortal, but they can be far more durable than we tend to believe.
