Romanian Dry-Aged Beef Gains Ground on International Markets

Romanian-produced dry-aged beef is increasingly attracting the attention of foreign buyers, especially amid growing demand for high-quality, origin-controlled products. Despite relatively small volumes, farmers raising specialized breeds such as Angus and Charolaise have succeeded in supplying HoReCa networks and gourmet stores in Germany, France, the Netherlands, and Belgium.

Beef aging — whether dry or wet — involves specific refrigeration and microbiological control technologies, which limit export capacity to only a few processing units. According to data from the Ministry of Agriculture and INS, Romania exported approximately 350 tons of dry-aged beef in 2024, an increase of 27% compared to the previous year.

The main challenges concern logistical infrastructure, labeling standardization, and the absence of a national promotion platform. Direct export is mainly accessible to cooperatives or integrated farmers who can ensure consistent volumes and compliance with EU veterinary and sanitary requirements.

Access to funding for aging technologies, staff training, and partnerships with foreign distributors could turn dry-aged beef into a flagship product for Romania’s agri-food exports.
