Emerging technologies in food processing: impact and efficiency

The food industry in Romania and the EU is undergoing a stage of accelerated technological transformation. According to McKinsey & Company, the adoption of emerging technologies can increase food processing efficiency by 20–30% and reduce raw material losses by up to 15%.

One of the major directions is the use of artificial intelligence (AI) and advanced analytics for monitoring and optimizing processes. In processing plants, IoT sensors collect real-time data on temperature, humidity, and raw material quality, allowing for rapid adjustments. This helps reduce waste and maintain quality standards imposed by EFSA and ISO 22000.

In the dairy and meat sectors, high-pressure processing (HPP) technologies are gaining popularity due to their ability to extend product shelf life without chemical additives, while preserving nutritional value. FAO studies show that HPP can reduce microbiological load by up to 99.9% without altering the sensory properties of food.

The automation of internal logistics through collaborative robots (cobots) and autonomous transport systems improves production flow and lowers labor costs. According to PwC, the implementation of industrial robotics in the food industry can reduce production times by 25%.

Another trend is the use of 3D printing for customized food products, particularly in the premium and HoReCa sectors. Although still in its early stages in Romania, in other EU countries this technology is used for the production of personalized desserts, pasta, or nutritionally adjusted products for medical needs.

In the short term, investments in emerging technologies are focused on large processing units, but in the medium term, an expansion toward small and medium-sized producers is expected, supported by European funds and growing demand for innovative products. The integration of these technological solutions is an essential condition for the competitiveness of the Romanian food industry in the global context.
