The digitalization of the food industry no longer means only production automation, but optimization at the formulation level. Artificial intelligence (AI) is already being used by global companies in the FMCG sector to analyze data on consumer preferences, cost structures, and ingredient performance. Machine learning platforms can simulate thousands of recipe variants, adjusting proportions to reduce total cost while maintaining sensory parameters.

Algorithms rely on databases covering chemical composition, flavor profiles, and ingredient behavior during processing. For example, partially replacing an expensive ingredient with a functional alternative can reduce unit costs without affecting perceived taste. In addition, AI can anticipate raw material price volatility and recommend financially more stable formulations.

According to OECD analyses on agri-food digitalization, the use of data and predictive tools contributes to increased efficiency and reduced waste. In the context of margin pressure and cost fluctuations, recipe optimization becomes a strategic instrument.

For Romanian processors, the opportunity lies in integrating digital solutions into product development, not only into production. AI does not replace the expertise of the food technologist; it complements it by enabling rapid analysis of multiple scenarios. In a competitive market, reducing ingredient costs by a few percentage points can make the difference between profit and stagnation.
