Microbiological safety, the pillar of the modern food industry

Microbiological safety remains the foundation of the modern food industry. According to EFSA (2024), more than 350,000 cases of foodborne illness are reported annually in the European Union, and 20% of these are linked to meat products. The main causes are contamination during processing and poor hygiene along the cold chain.

European standards are clear: Regulations (EC) No 852/2004 and (EC) No 853/2004 impose strict measures regarding hygiene, temperature control, and microbiological risk analysis (HACCP). In Romania, according to the National Sanitary Veterinary and Food Safety Authority (ANSVSA), over 96% of authorized units comply with EU norms, but inspections carried out in 2024 highlighted the need for additional investments in disinfection equipment and automatic temperature monitoring systems.

New technologies play a decisive role in reducing risks. Cold plasma sterilization systems, controlled irradiation, and rapid pathogen detection through biosensors shorten analysis times and enhance the safety of finished products. FAO and WHO recommend the implementation of ISO 22000 standards and the complete digitalization of traceability systems to prevent contamination throughout the supply chain.

For processors, investments in safety are not just an obligation but also a competitive advantage. European consumers increasingly associate safety with product origin and quality.

Romania has the legal and technological foundation to become a regional benchmark in food quality control, provided it continues to invest in professional training, digital monitoring, and a culture of responsibility.
